Customs of the days

Lighting the hanukkiah: One light the first night and one more each night after, kindled at nightfall by the doorway or a window facing the street. Sephardim light a single hanukkiah for the household.
Hallel every morning: The full Hallel is said all eight days at Shaharit, with the Torah reading of the offerings of the princes.
Al HaNissim: The paragraph of thanksgiving added to the Amida and to the Birkat HaMazon through the eight days.
Bimuelos & sfenj: Fried dough in honey — the Sephardic and Moroccan table's answer to the miracle of the oil, alongside latkes and sufganiyot.
Rosh Hodesh Tevet: Falls inside Hanukkah, so two Sifrei Torah are taken out and Musaf is added on that day.
Zot Hanukkah: The eighth day, when all eight lights burn — kept in many Sephardic homes as a day of tefillah and tzedaka.
